Shlada Matesha - Tomato Salad

Shlada Matesha a traditional refreshing salad.
Ingredients
5 tomatoes
3 green peppers
1 Cucumber
1 red onion
For the dressing
3 tbsp olive oil
1 tbsp moroccan vinegar
fresh coriander
pepper
Salt
Peel the tomatoes first. Then cut the tomatoes in half and squeeze out the seeds.
This is paramount to remove all the seeds. In Moroccan cuisine, it is seen as a lack of manners if one serves a salad with tomato, cucumber or any other vegetables seeds.
Grill the green peppers on the stowe or in the oven. Once grilled put them into a plastic bag and close it. When cooled down peel the grilled skin off and cut them open. Get rid of al the seeds. Finally cut the peppers in small cubes.

Peel and cut the cucumbers in cubes. Make sure you remove the seeds.
Peel and chop the red onion.
Chop the coriander finely.
Mix all of the above in a bowl.
Add 2 tbsp of olive oil, 1 tbsp of moroccan vinegar a 1 and haf tsp of ground cumin.
Mix well and serve.
