Chicken Tagine

Simple Chicken Tagine recipe

For 4 people, cooking time 45 minutes, preparation time 15 minutes, Easy to make.

1 whole chicken (800gr)
1 and a half large onion finely chopped
150gr of coriander finely chopped
100gr of parsley finely chopped
3 garlic cloves finely chopped
1 tablespoon ground ginger
1 full tablespoon of paprika
1-2 lemons, preserved in salt
1 full teaspoon of ground cinnamon
1 full teaspoon of tumeric
1 teaspoon of smen (Moroccan salted butter)
12 green olives
2 tablespoons of oil

Remove the skin from the chicken, leaving it skinless

In a bowl mix the finely chopped onions, parsley, coriander, preserved lemon pulp and garlic

Add the ground ginger, paprika, cinnamon, smen and tumeric

Add the oil and start mixing all the ingredients together until an orange colour paste is formed

Stuff the chicken with the mixed ingredients Rub the whole chicken very well with the rest of the paste. Place the chicken in a terracotta tajine (don’t worry if you do not have one, you can always use a pan.)

Let it cook at a low to medium heat for 5 minutes until the onions are golden then add some water and let it cook on low heat. Turn up the heat and cook for a further 45 minutes and add water from time to time and when needed.

Just before the chicken is well cooked add the olives
